Ingredients: (makes 12)
- 150g of unsalted butter
- 125g of self rising flour
- 125g of caster sugar
- 2 eggs
- 1tsp of vanilla extract
- 28 (I know it is a lot) Oreos
Icing:
- heat the oven to 180'c, gas mark 4
- line a cupcake tray with 12 cases
- set 12 of the Oreos aside
- in a 2 small bowls, separate 8 of the Oreos, with the filling in one bowl and the biscuits in the other
- grind the remaining 8 until smooth
- mix the softened butter, flour, sugar, eggs, vanilla and ground Oreos in a big bowl
- spoon the mixture equally into the cupcake cases
- cook for 18-20 minutes
- leave to cool
- to make the icing, melt the butter and the Oreo filling in a bowl until soft but not liquid
