Back to School Muffins

going back to school is so hard after you have had such a fun past few weeks of summer. That is why I decided to make some muffins so that after school I can just sit with these lovely treats before getting on with my work. The cakes turned out a delight and below is the recipe for my twist on Chocolate chip muffins.

Ingredients:(makes 12)

-250g of self raising flour
-a pinch of salt
-1 teaspoon of baking powder
-50g of butter
-75g of caster sugar (brown sugar also works)
-100g of butterscotch drops (can be bought from most big supermarkets)
-2 eggs
-2 teaspoons of vanilla essence
-250ml of milk
-12 muffin cases

Method:

1. Put a paper case into each hole of a cupcake tin
2. Sift the self raising flour, salt and baking powder into a large bowl
3. Turn the oven to 200'c (gas mark 6)
4.Cut the butter into chunks and ad it to the mixture (DON'T MELT THE BUTTER)
5. Rub the butter into the flour so it looks like breadcrumbs
6. Add the sugar and 3/4 of the butterscotch drops
7. Stir the mixture with a wooden spoon
8. Break the eggs into a SEPARATE bowl and stir them hard with a fork
9. Add the vanilla and milk and stir everything well
10. Pour the egg mixture into the flour
11. Mix everything together, ( the mixture may be a little lumpy)
12. Spoon the mixture into the paper cases to the top and sprinkle the rest of the butterscotch on top
13. Bake the muffins for 20 minutes until they have risen
14. Leave them to cool for about 5 minutes and then eat them fresh or put them in a tin for later. (they must be eaten within 3 days unless frozen)

Naked Dough- A new idea to society

One thing I love more than anything is a pop-up shop selling a new idea or a unique kind of food that I have rarely tried before. 

My experience today was just that. When I was a young child my favourite thing to do after helping my mum with the baking was to lick the bowl. However my mum always warned me that I would get an upset tummy if I ate too much cookie dough or cake batter. 

However, this new pop up shop in Old Street station makes raw cookie dough with no raw egg therefore, the dough is perfectly safe to eat as much as you want.This place, Naked Dough is simply raw dough served in a cup, cone or milkshake with a range of flavours that you would usually bake up and serve as a cookie.

The flavours include:

  • Unicorn food- sprinkles and marshmallows
  • Emoji poo- chocolate chips
  • Mud baths- chocolate dough
  • Hazel's nut- nutella and kinder bueno
  • Ed Sheeran- salted caramel and honeycomb
  • Nutting better- crunchy peanut butter
Although very filling this new idea is a great idea if you want a sweet snack whilst walking through the station. Not only did I have an enjoyable time sitting in their very lively restaurant but also loved the unique idea of serving cookie dough, like ice cream, in a cup of cone.

 This idea to serve cookie dough in a tub or cone, not just a bowl about to be washed up is any young child's dream and both me and my friend had an enjoyable time as well.

summer treats

Summer is one of the best times of year for baking. In all newspapers and magazines there is always a recipe or two for something summery like a smoothie or a fruity cake or some kind. Therefore I decide to write my own list of amazing recipe for the summer. Lottie’s top 3 treats for the sun.


3. Berry smoothies:

Throughout the summer there are many farms that offer you to pick your own fruit and vegetables from a selection they have grown over the previous year. Me and my dad have a joyous time will going to these farms and come back with peas, spinach and once even carrots. However, we always come back with boxes of two things. Strawberries and raspberries. In the UK both of these products are expensive so when we go to these farms, as there produce is cheaper, we make sure to pick as many as possible. However, both strawberries and raspberries go off quite quickly so we need a few recipes to use them up. My favourite is probable the easiest and here it is.

Ingredients: (serves 2)
·       ½ a cup of raspberries
·       ½ a cup of strawberries
·       ½ a banana
·       ¼ of a cup of plain/Greek yoghurt
·       ½ a cup of milk
·       ½ a tablespoon of sugar/honey

Method:
1.    Pour the milk and yoghurt into the blender.
2.    Cut up the strawberries and banana and put them in the blender along with the raspberries and sugar/honey.
3.    Blend until smooth

The recipe is a simple as that, not only is it tasty but it also contains calcium and is full of vitamin C so is healthy as well


2.Shortbread:
Another recipe I love during summer is biscuits and one thing I find particularly easy to make is shortbread. This recipe is from one of my favourite recipe books and is a fun and easy bake for families of all ages.

Ingredients: (20-30 biscuits)

·       200g unsalted butter
·       100g golden caster sugar
·       300g plain flour
·       Pinch of salt

Method:
1.    Preheat the oven to 180’c (gas mark 4)
2.    Cream together the butter and sugar in a big mixing bowl. Keep mixing until it is light, pale and fluffy
3.    Sift in the flour and salt beat the mixture until it is a dough, then bring together to form a ball.
4.    Put in the fridge for 45mins to an hour
5.    Dust the workshop with flour and roll out the dough
6.    Cut out your biscuits in any shape you wish and put them on a tray lined with no stick baking parchment
7.    Put them in the oven for 10-15 minutes
8.    Leave them to cool and then enjoy

1   Chocolate bananas:

My favourite thing during summer is a barbecue. However although there are sausages, burgers and kebabs, there is also something else. Chocolate bananas. Here is a recipe for the simple but tasty, sweet but rich, delicious chocolate bananas.
Ingredients: (serves 4)
·       4 bananas
·       24 ounces of milk chocolate
·       100s and 1000s sprinkles

Method:
1.    Cut each banana lengthways no further than the bottom layer of skin.
2.    Place 6 squares of chocolate in the bottom of each banana
3.    Wrap in foil and cook over hot coals for ten minutes turning once.
4.    Remove the foil and sprinkle the bananas with whatever toppings you wish.

Lottie's Cream Cheese and pesto twisters

Sorry I haven't posted in a while. I have been busy with exams and other things.

This weekend my brother had a homework assignment to create a solar system. He decided to use pastry to do it. However, he only used half the pastry. My mum said I could use the pastry in anyway I wanted. I decided I would make cheese twisters, like the ones they sell in farmers' markets. However, my idea was not just to make the obvious cheddar cheese ones. I wanted to make them less crumbly, more chewy kind of texture. That is why I did not use puff pastry, but, shortcrust pastry instead. I also decided that I would use the pesto ad cream cheese as the flavour. my idea worked just as I wanted it to and here is the recipe:

Lottie's Cream cheese and Pesto Twisters:(makes approximately 24)

ingredients:

  • 100g of cream cheese
  • 2tbsp's of fresh pesto
  • 320g of puff pastry
  • flour for dusting
  • 1 egg beaten

Method:

1.  Heat the oven to 180-200 gas mark 6
2. Tip the cream cheese and pesto into a bowl and mix well
3. Roll out the pastry onto a lightly floured surface and roll into a rectangle shape. (if you can't do not worry, but when measuring later it will make life easier)
4. Cut your rolled out pastry in half
5. On one half spread the pesto and cream cheese mix as evenly as possible
6. Place the other half of the pastry on top like a sandwich
7. Cut this into strips about 1cm thick
8.twist the pastry's carefully as they rip if you pull them
9. place them on the tray and egg wash them with a beaten egg
10. cook them for 20-25 minutes until risen.

Borough Market

Over the Easter holidays, I had the enjoyable experience of going to work with my dad for a unique work experience. Lucky for me, my dad works in the heart of London next to the famous London Bridge. His fortunate location also happens to be directly in front of the Borough Market. 

Borough market is full of freshly grown produce all freshly made and grown by farmers. Some of the produce include:

  • Vegetables
  • Fruit 
  • Truffles
  • Mulled wine
  • Pork and a variety of butchering
  • And of course my favourite: CHEESE!

Lucky for me a great deal of the stalls offer samples of almost anything you could ever imagine. from sticky Camembert to crumbling biscuits and even the chance to examine and smell a £190 pound truffle. 

However for me the highlight of all of this was the mouth watering array of cheeses they had to offer. As a foodie, one of my favourite foods is cheese. From soft Brie to a hard mature cheddar, I always enjoy a sample or bite of this unique product. Fortunately for me, the market is full of stalls selling different kinds of cheese from all over the UK.  

Overall I really enjoyed my experience exploring the market tasting so many different foods from so many parts of the country.

community fridges

Recently I have been watching a very enjoyable program. Jamie and Jimmy’s Friday night feast. Although the series is mainly about recipes and cooking, I have also been very interested in a part of the program called Food-Fight. This part of the program looks into some of the biggest wastage's of food in the UK and how they are caused. There are some unusual ideas like eating old cows instead of new-born calves and some obvious ones about eating a bigger variety of fish. However in one of the episodes there was something that caught my mind. The idea of a community fridge.

 As I said in my Lottie’s kitchen post, I love food charities and how they help the world. However A community fridge is purely just for your area or county and they are easy for you to make a difference to the less fortunate people in your neighbourhood. A community fridge is quite obviously a fridge or several of them place in your area or county. The fridge is there only for your sake and the sake of others around you. All you need to do is place some of your leftover food that hasn’t gone bad yet in there. A few unripe avocados, a two day old loaf of bread. It is as simple as that. And if you need food just go to the fridge and take something out for yourself. Everyone wins. You are getting rid of leftovers and sometimes even get food in return.

This is especially beneficial for an estate or block of council flats as it means that the chances of them running out of food will rapidly decrease. It will also majorly decrease the amount of food being wasted in the country which is at the moment about £13 billion pounds worth. With all this leftover wastage it could feed the 1.4 million starving children in Africa.
So overall with this brilliant idea we could:
·       - Stop food wastage
·        -Change the amount of hunger people in UK must face
And many more. 

This is how you can help: Suggest to your local MP or park workers to add this idea into the community. You will be surprised how many people benefit from it. Including you.

Kale and egg salad

on a Monday evening I always enjoy a particularly light meal. After mixing and matching different original ideas I came up with my own recipe for a salad, that is healthy, nutritious and full of flavour, protein and something your taste-buds would really appreciate. the good thing about this recipe is you can make it your own. this is the recipe for my Kale and Egg salad:

ingredients:

  • An Egg
  • A handful of kale
  • Some cheese of our choice (preferable orange cheese)
  • Any spices or dressing for the kale (such as salt or paprika)


For the egg: the egg can be cooked for your liking though I recommend not doing it scrambled as that would make it too flavoursome for the kale and the cheese . My personal favourite is a soft poached egg therefore I will show you the recipe for that

The kale: the kale like the egg can be cooked to your liking, it can be crispy or boiled. however as my favourite way to eat it is just cooked in the microwave then that is what I will explain to you.

Method:

1. To make the poached egg you need to: 
Add a small dash of vinegar to a pan of steadily simmering water.
Crack the eggs into a clear bowl or cup.
Create a gentle whirlpool in the water to help the egg white wrap around the yolk.
Slowly tip the egg into the water, white first. Leave to cook for three minutes.
Remove with a  spoon, cutting off any wispy edges using the edge of the spoon.
Drain onto kitchen paper – nobody wants egg like poaching water making their toast soggy or dampening their salad.

2. In order to cook the kale you then need to:
Heat olive oil in a large saucepan over medium-high heat.
 Add the garlic(optional) and cook until soft.
 Raise heat to high, and toss to combine. 
Cover and cook for 5 minutes. 
Remove cover and continue to cook, 
Keep stirring until all the liquid has evaporated. Season with salt and pepper to taste and add vinegar.(seasonings are optional)

3. Now you have your cooked Kale and freshly boiled egg you need to put the whole dish together. 
To do this you need to dry the kale and put it on your serving plate
You then need to grate some cheese of your liking onto the Kale. I recommend doing a mild and soft cheese such as mozzarella or red Leicester.   
finally, place your egg on top of the dish and serve.

You can tell if your egg is a good egg by seeing if when you cut it open it has a golden yellow yolk and starts to drip all over the kale. 
So there you have it. A healthy, simple, quick and easy recipe for a small dinner whenever you feel like it.

School Dinners

If you read my last blog Food-Freaks then you almost certainly would have read my post “school menus.”  In this I was talking about the quality of the food at my primary school. However after I moved on to secondary school I decided to rewrite this blog from my opinion of the food at my current School.
 At my old school, everyone came in for lunch at the same time and there was never anyone missing out or getting caught skipping lunch as we were all young and didn’t care. However after starting secondary school I have begun to notice more and more that there are people that are skipping lunch. In my previous school this was not such a problem as they kept track of everyone that came in and out of the lunch hall. At secondary school, since everyone is now a teenager they have the strange thoughts of thinking that lunch is not vital. But guess what? They are wrong. Teenagers should not be skipping lunch just because they know that they will get away with it. My idea is to find a healthier more tasty option than some of school products as it will make teenagers more willing to come to lunch. It will also stop the number of packed lunches in the school. This is better for enviromental reasons such as less plastic wrapping and packaging is being used. 

In order to rethink the school dinners, they must be:
Cheap
As healthy as possible
A balanced diet
And food that can be made quickly and in big portions.

 After experiencing two different types of school lunches I noticed the same product that is served at every meal. Pasta. Whether with tomato sauce or just with plain grated cheese pasta always happens to make an appearance. Although pasta is not bad for you, having it every day is not the healthiest alternative. Many schools serve pasta because they know that the majority of children eat it and it is cheap, quick and easy to serve. However so are other healthier products such as jacket potatoes?  They don’t frequently make an appearance. Why not? I think that schools should be serving other alternatives to the main meal such as a healthy jacket potato with butter or protein like tuna or baked beans. Currently my school do an alternative of pasta and Jackets along with the usual salads, sandwiches and fruit and vegetables. However after asking a few of my friends from other schools, I have come to the conclusion that my school is only of the only schools that does this. Well this should change.

If you agree tell your school or your child’s school. They will most certainly be impressed that you raised awareness. Make a stand today and try to change the meal you have for lunch. If you want something healthier that’s also cheap and easy then ask for it. There are most probably people that agree with you and also want the healthier alternative.

Kale and Milkshakes

Over my last few posts I have been talking all about healthy eating. People talk about how children should not be eating junk food and only the negatives.

This post is different.

I want to tell teenagers that having a treat once in while is fine and will not damage your health.

The picture above is a MESSY MILKSHAKE. It is covered in white chocolate chips, marshmallows, whipped cream and smarties. My mum would call this a diabetic coma. Having this every day would be terrible it could cause illnesses such as type 2 diabetes or rapidly make you obese. However, having this once in a while is the complete opposite.

A balanced diet does not just include fruit and vegetables. It also includes some fat and sugar. People can conclude that it is ok to have sugar every so often. Especially if you are a growing child.

Unlike other children I love kale and sprouts and most other green vegetables. In honesty, I almost certainly enjoy these kinds of foods more than sugary products. However this does not stop me. 

When I am out with my friends or family or am at a special occasion I, like everyone else love having a milkshake or an ice cream sundae. And that is OK!

So if you are having a bad day or are at a party or occasion, then have some fun with food. Let the healthy eating go for a couple of hours, and trust me it will not cause any damage to your body.

Packed lunches


Sorry I haven’t posted a recent blog in while, I hope this one makes up for it. Based on my previous post a couple of weeks ago “school dinners,” I decided to go to the opposite subject this week “packed lunches.”  As I have school dinners at my current school, I would appreciate it if you comment below, healthy and cheap packed lunch ideas. Enjoy reading!

 At my primary school packed lunches were prohibited. However, after joining my secondary school, I noticed how many people have them. Although at my school they serve a great range of hot food, sandwiches, salads and more almost 50% of the school every day. This is not only a problem for environmental reasons, but is also a problem for healthy eating.
My friend’s packed lunch usually contains: a sandwich, a drink, and a packet of crisps and a chocolatey product of some kind. Having this cold pre packed meal five out of seven days a week is not always good for a child's balanced diet. people will of course rely on more processed food than fresh food in their lunch box. 


Having plastic wrapping being thrown away every day can lead to problems such as pollution. All of these problems, just because someone is not keen to have school dinners. Having a packed lunch once in a while is not bad for you but having sugary products such as chocolate bars AND salty products such a crisps is not good enough if you are having it five out of seven days a week.
if your child is having a pack lunch, think about the products you are putting in everyday. maybe stop making them sandwiches and start making them more healthy filling foods: like pasta salad .  maybe even try to get them hot School lunches which will save you the stress of making a quick lunch every morning. you will also be helping the environment by not wrapping up so much food in cling film.

Location isn't Everything

Great food can be anywhere from the smallest cafe in primrose hill to the biggest restaurant in London. One of the things I love about food is you can be anywhere and still have an enjoyable experience. There is one place in the world that just about illustrates this perfectly. For me this place is one of the nicest cafes on the planet. Guess where it is. It's not in the most exquisite places or even in a very nice area. In fact, it's behind a shopping centre in a dirty area next to a car park in Israel. 
However, although its surroundings are not somewhere you would choose to go, the cafe is fabulous. The restaurant has been blocked out from any of these unbearable views and has been covered in plants. If you were inside it would seem like you are in a shady cafe by the beach. The food itself is delicious too. 
This is one of the things I love the most about food. A great meal can be cooked by anyone, anywhere.
It's your turn now. In your own kitchen, big or small, you can create a food masterpiece. so why don't you try? You have nothing to lose.

Lottie's Kitchen


One of the great joys of food is sharing. Spreading your knowledge to the world.  Lottie's Kitchen is a charity supporting the families with children in hospital. Their work is amazing and there are two main reasons why I respect this charity so much.
1. Quite obviously, I love food and one of the greatest aspects of food is sharing it, only so other people can experience the joys of the meals you prepare.
2. Lottie's kitchen doesn't just think about the child, although this is important, their main priority is the families of the sick and what sort of impact the food will have on them. This may not seem important, however, the more strongly the family are looked after, the better they will feel about looking after the child.

Last Christmas, I had the great joy of going there with my family and a friend to work there for the afternoon. We spent part of the afternoon listening to the achievements of the charity and the other half preparing meals for the children in hospital. In 3 hours we succeeded in making 80 meals this means that in a full day’s shift we could have made 320. This was an incredible experience and I felt so much pride in preparing these meals. I also loved some of the amazing stories about the charity that the inspiring women who do this every day told my family and I.

One of the most amazing things they have ever done is setting up in hospitals something called COFIX. if you have ever had to suffer the long periods of time in hospital, then your family may have realised that they are spending a great deal of money on expensive lunches from a hospital canteen, this can make somebody’s bill very overpriced. In many hospitals they have now opened a COFIX. This many seem like an ordinary Café. However All of COFIX's products are not more than 5 dollars. This means that having a quick sandwich every time you are waiting for your child in hospital, your will not have to spend too much money. Although this was just a normal chain of Cafes Lottie's kitchen persuaded almost all of these hospitals to open one. This is one thing I find amazing as it is not an ordinary idea that any charity would think of 

Another one of the great achievements done by Lottie’s kitchen is microwaves. As you may not know a great majority of sick children will have siblings. The parents must be in the hospital with the ill child, so where does that leave all the siblings? There sometimes might be 3 or 4 of them. Lottie’s kitchen takes care of this. They mainly take care of the food aspect. In every sick child’s house they have installed a simple and easy to use microwave. This means that a child can just take something out of the fridge and heat it up for their supper. This may not be an exquisite banquet. However it does keep them going and means that the parents do not have to worry about feeding them on top of everything else they have to deal with.

breakfast

Breakfast. One of the most important meals of the day. Children are supposed to have a maximum of six cubes of sugar per day. A massive 3 cubes is consumed by a great deal of children before breakfast. This means that children are having half of their daily sugar each day before they go to school. Sugary breakfast products include not only obvious spreads such as nutella, but also cereals that you may not even expect to contain sugar. With this in mind, eight out of ten parents do not realise the sugar in these products. Well this needs to change. Breakfast should be healthy and packed with nutrients in order to give children the best start to their day.
This post is going to be different to the last few as I am going to share with you what I believe are some of the nicest recipes for breakfast. These are my: TOP 5 BREAKFAST BEAUTIES!!

5. Strawberry Parfait: this tasty idea may taste like a dessert, but is still low in calories, sugar and fat. If you have a sweet tooth then this is for you, and is a healthy alternative to the sugary breakfasts you’re used to.
Ingredients: (serves 1)
1 pot of fat free Greek yoghurt
1 teaspoon of stevia (or any sweetener)
2 handfuls of strawberries
1 handful of blueberries
2 tablespoons of granola
(Any other fruit that you wish to put in)
 Method:
·       Mix the stevia with the yoghurt and stir well.
·       Cut the strawberries small and mix them gently with the blueberries to form a fruit salad.
·       Take a tall glass and add a layer of yoghurt
·       Then a layer of fruit
·       Then a layer of granola
·       Then a layer yoghurt
·       Keep doing this until the glass is full.
This is a perfect breakfast idea that can be made the night before if you have a busy work schedule. Children also love this recipe so a great idea for a family breakfast

4. Poached eggs: this is a simple recipe that doesn’t take longer than five minutes to make. So great if you are in a hurry. This recipe is loved by all in my family and is totally natural and quite obviously contains no sugar. This is a great alternative if you want a savoury breakfast.

Ingredients: (serves 2)
2 eggs
Pepper for sprinkling (optional)
(It’s as simple as that)

Method:
·       Fill a small pan just over one third full with cold water and bring it to the boil.
·       Crack the eggs one at a time into the pan.
·       Leave them for 3-4 minutes checking them well so they don’t overcook.
·       Season with pepper and serve at once.

If the eggs don’t work first time don’t panic. Please note: everyone likes their eggs cooked for a different amount of time. If you want to have them hard boiled then leave them in for longer. You can also add your own twists to the eggs by serving them with products such as cheese, bread or vegetables.

3. Extra bananery, banana cake: I know what you’re thinking. “This can’t be healthy. A cake must have sugar in it.” Well believe it or not this cake contains no sugar and is a great way to start your day if you want a quick start. My father usually makes this cake on a Sunday so that it is ready for the upcoming week.

Ingredients:
25g of rolled oats
4 overripe bananas (a great way to use leftover bananas)
200g of self-rising flour
50ml of maple syrup
25g of unsalted butter
50ml of olive oil
A pinch of salt (if needed)

Method:
·       Preheat the oven to 180 degrees C
·       Sprinkle a third of your oats into the bottom of a loaf tin
·       Slice up one of your bananas and place it evenly above your oats
·       Peel and mash the remaining bananas in a large bowl.
·       Add the flour, maple syrup, butter, oil, salt and remaining oats and mix will until everything is a soft dropping consistency
·       Pour the mixture as evenly as possible and bake in the oven for 45 minutes
·       Take out of the oven and let cool

The cake can be stored for 2-3 days. It can be served with fruit, yoghurt, jam and anything else you wish and is a great recipe for all the family.

2. PB & J alternative, as a smoothie: many children and adults love their peanut butter. Especially my younger brother. However why have it on toast when you can have it blended in a smoothie with a tonne of fruity goodness.

Ingredients: (Serves 1)
¾ of cup low-fat milk
¾ of cup frozen raspberries
½ a banana
1tablespoon of natural almond or peanut butter
1tablespoon of honey

Method:
·       Throw everything into the blender
·       Press the button and let the blender do all the work
·       Pour into a cup and drink

This drink can be served with anything and is a healthy alternative to the chocolate milk or sugary orange juice you may have been drinking. This can also be a great treat in the summer on a lovely day. Why not take a picnic to the park with some fresh homemade smoothies.


This is it my top favourite recipe for breakfast.
1.   Baked avocado egg: in my opinion, there is no better combination than avocado and eggs. This delight is not only healthy but will fill you up if you have a long day ahead. Just follow this simple recipe and enjoy this great way to start your day.

Ingredients:

1 large avocado
2 small medium eggs
Chives (if wanted)
Chilli flakes (if wanted)
Salt and pepper

Method:

·       Half the avocado and remove the stone.
·       Crack an egg into each half and sprinkle a pinch of chilli flakes and chives.
·       Place the avocado halves in the oven for 10-15 minutes.
·       The cooking time will depend on you egg size.
·       So will the temperature.
·       Remove from the oven and sprinkle with salt and pepper.

The avocado egg is certainly one of my favourites and is a great way to start the day. This may also be a light dinner if you are in a hurry. Avocado eggs can be greatly enjoyed by all for both children and adults.

As you can see there are many other healthy alternative than the sugary cereals we are used to. This is the sort of food that the world needs to be eating at the start of their day. Here’s what you can do. If you are serving your children breakfast cereals then look at the label. How much sugar does it really have? Try a new  before school/ work breakfast. You will be really thankful in the future.
